Taco Salad

Prep: 5 minutes
Cook: 10 minutes • Serves: 4

1 pound extra lean ground beef
1/4cup water
1 tablespoon taco seasoning
1 package (5 ounces) spring mix salad greens
2 medium plum tomatoes, chopped
1/4cup drained sliced black olives
1/2cup reduced fat shredded Cheddar cheese
16tortilla chips
1/2cup fat free salad dressing

1.In large skillet, cook beef over medium heat 7 to 8 minutes or until beef is no longer pink, stirring occasionally. Stir in water and taco seasoning, and cook 3 to 4 minutes or until most of the liquid is absorbed, stirring occasionally.

2.To serve, evenly divide spring mix into 4 individual bowls. Over spring mix, evenly divide beef mixture, tomatoes, olives and cheese. Place 4 chips around salad in each bowl and serve with dressing.
