PB & J Stuffed French Toast

1/4cup milk or heavy cream
1/2teaspoon vanilla extract
1/4 teaspoon ground cinnamon
4 slices Texas toast or whole grain bread
3 tablespoons favorite jelly
3 tablespoons creamy or crunchy peanut butter
1 tablespoon unsalted butter
Powdered sugar for dusting (optional)
1/4 cup maple syrup for serving
1.In shallow dish, whisk together eggs, milk, vanilla extract, cinnamon and salt.
2.Evenly spread 2 slices bread with jelly; evenly spread remaining 2 slices bread with peanut butter. Press jelly and peanut butter sides of bread together to make 2 sandwiches. Dip both sides of sandwiches into egg mixture.
3.Heat griddle or large skillet over medium heat; add butter and spread until melted. Cook sandwiches 5 minutes or until golden brown, turning once. Serve dusted with powdered sugar, if desired, and syrup.
