Chicken Tortilla Soup

This easy to assemble tortilla soup recipe starring rotisserie chicken, tomatoes, chilis and spices will keep you warm and full.

Serves: 8

1 Rotisserie chicken, from the deli, shredded
46oz can Chicken broth
2 oz can Tomato sauce
15oz can Diced tomatoes
2 Anaheim chilies, diced
1 Jalapeno pepper, diced
1/2cup Onions, diced
3 to 4Large tomatoes, diced
2 Cloves garlic, minced
2 Tbsp Cilantro, minced
1 Tbsp Chili powder
2 tsp Cumin
2 tsp Pepper
1 tsp Salt
2 tsp Tabasco Sauce

1 cup Cheddar cheese, shredded
1 Avocado, chopped
1/4cup Cilantro, chopped
1 Lime, cut into wedges
2 cups Crushed tortilla chips

1.Throw everything except garnishes in the crockpot and cook on high for 5-6 hours.

2.If not using a crockpot, sauté garlic and onion in olive oil before adding remaining ingredients. Simmer for at least an hour for the flavors to mix together.

3.Dress with garnishes.
