Breakfast Sausage Stuffed Peppers

Cook: 35 minutes • Serves: 3-5

1 Farmer John Premium Spicy Pork Roll Sausage browned and drained
3 large Peppers
1 clove garlic minced
1/2 cup shredded cheese
6 eggs

1.Preheat oven to 375 degrees Fahrenheit. Cut peppers in half and remove seeds. Sprinkle with salt and pepper and bake for 20 minutes.

2.While the peppers bake, brown the sausage and minced garlic in pan. Once sausage is fully cooked, drain fat and set sausage aside.

3.After the pepper halves have cooked for 20 minutes, fill each half with a scoop of sausage and shredded cheese, top with a cracked egg and cook for 15-20 minutes until the egg is cooked.
